World Egg Day: Five easy recipes to try at home

This year marks 30 years of celebrating Egg Day, which was recognised in 1996 to raise awareness about the nutritional value of eggs.

October 9, 2026, is celebrated as World Egg Day. It is celebrated annually on the second Friday of October. This year marks 30 years of celebrating Egg Day, which was recognised in 1996 to raise awareness about the nutritional value of eggs.

Here is Reporter World taking part in the awareness campaign with five egg recipes.

1. Turkish eggs

Ingredients

Eggs – 2Greek yoghurt – 3 tablespoonsGarlic cloves – 3Salt – to tasteOlive oil – 1 tablespoonButter – 1 tablespoonRed chilli flakes – 1 teaspoon

Preparation

In a serving bowl, add Greek yoghurt and spread it evenly. Grate a garlic clove, add salt to taste and mix it all with a fork.

Boil the eggs for 5 minutes to get a soft-boiled texture. Slightly break open the eggs over the yoghurt.

Now, take a thick-bottomed pan and add olive oil. Once it becomes hot, add the rest of the grated garlic along with chilli flakes and turn off the flame. Mix it all well and pour this chilli oil mix over the eggs. A high-protein breakfast is ready.

2. Egg roll

Ingredients

Eggs – 2Sliced onions – ¼ cupSliced capsicum – ¼ cupChopped green chilli – 1Salt – to tasteChapati – 1Butter – 1 tablespoonItalian seasoning – ½ teaspoonGaram masala – ½ teaspoon

Preparation

In a pan, add butter. Once melted, add onions and sauté them well until translucent. Then add capsicum, green chilli and salt. Mix well and allow to cook for 3 minutes. Now add the finely beaten eggs to this mixture and spread evenly. Before the eggs turn hard, put the chapati on top and allow it to cook for 2–3 minutes. Once it is cooked, flip it over and cook the other side as well.

Now roll the chapati and enjoy.

3. Rice omelette

Ingredients

Eggs – 3Olive oil – 2 tablespoonsRed chilli flakes – 1 teaspoonGarlic, chopped – 1 tablespoonSpring onion, chopped – 1 tablespoonCorn kernels – ½ teaspoonCooked rice (preferably basmati or any flat ones) – ¼ cupGrated cheese – 1 tablespoonSalt – to taste

Preparation

In a pan, pour olive oil and add grated garlic, corn and spring onion along with salt. Give it a good mix. Cover and cook for 3 minutes, then add the rice and spread it evenly after mixing everything. Now beat the eggs well and pour them over the rice. Add cheese, cover and cook for another 5 minutes. And just like that, the rice omelette is ready. You may have it for lunch or dinner.

4. Ema Dashi egg

Ingredients

Eggs – 3Garlic, chopped – 1½ tablespoonsButter – 1 cubeCheese slices – 3Green chillies, split – 3Salt – to tasteWater – ¼ cup

Preparation

In a thick-bottomed pan, add butter, garlic, green chillies and salt to taste. Sauté them well for 2 minutes. Now add water, and once it comes to a boil, crack open the eggs and add them to the pan as they are. Make sure the yolks aren't broken. Cook for 2 minutes, and the Bhutanese dish is ready.

5. Khagina

Ingredients

Eggs – 3Onions, cut into half-moon shapes – 1 cupGinger-garlic paste – ½ tablespoonGreen chillies, split – 2Red chilli powder – 1 teaspoonTurmeric powder – ½ teaspoonSalt – to tasteOil – to cookCoriander leaves – to garnish

Preparation

Heat a pan and add oil. Add onions, ginger-garlic paste, green chillies and salt. Sauté and cook until the onions turn slightly pink and translucent. Add turmeric and chilli powder and give it a good mix. Now make small partitions in the pan and add cracked eggs into those spaces. Cover and cook for 3 minutes. Make sure not to overcook the eggs.

Garnish the Khagina with freshly chopped coriander leaves and have it with boiled rice or any bread of your choice.
